Process
Agave Harvesting
Harvesting the agave hearts, also known as "piñas," marks the beginning of the process. These hearts are carefully hand-cut to ensure optimal quality and maturity of the plant.
Agave Cooking
The harvested agaves are cooked in a traditional stone oven for a period of 12 hours. This essential step releases the natural sugars of the agave, ready to be fermented.
Extraction
Once cooked, the piñas are crushed through a traditional mill to separate the fibers from the juice, also known as agave honey. Three to four washes are needed to extract all the sugars and produce a superior quality juice.
Fermentation
Once the juices are in the wooden vats, yeast is added. During the fermentation process, the yeast acts on the sugars in the agave, transforming them into alcohol. This step is crucial for developing complex aromas and unique flavors in the tequila.
Distilation
The fermented juice is then distilled twice in traditional copper stills. This double distillation refines and concentrates the flavors, ensuring exceptional quality and purity in the final product.
