What makes Idilica coffee liqueur special is its unique marriage of two emblematic Mexican ingredients, creating a rich and captivating tasting experience for lovers of complex and exotic flavours.

Our process

Harvest of the hearts of the agave.

1 Agave harvesting

The agaves are baked in a traditional stone oven for a period of 12 hours.

2 Agave cooking

Once cooked, the piñas are crushed through a traditional mill to separate the fibers from the juice. Three to four waters are needed to extract all the sugars and produce the juice or agave honey.

3 Extraction

Once the juices are in the wooden vats, yeast is added. During the fermentation process, the yeast acts on the sugars in the agave that are transformed into alcohol.

4 Fermentation

The juice is then distilled twice in traditional copper stills.

5 Distilation

During this phase, the tequila is patiently aged in oak barrels, allowing it to develop nuanced flavors and a smooth, refined character over time.

6 Aging
